Been wanting this for a while so today was the day.

That crust on that steak looks so beautiful it's a shame to cover it with gravy.  But go ahead and do it anyways, I won't tell..  Awesome plate!

Chicken fried steak is the ultimate southwestern comfort food.  To find a really good one, one must be west of the big river and preferably in Oklahoma, Texas or that general area of God's country.  Dining emporia in that part of the world compete vigorously to produce the largest, most succulent, and superbly tender fried beef offerings for their customers.  Tastes in gravy vary a little but a CFS in Oklahoma City, Dallas, or Houston will always be served with a generous helping of gravy on top and underneath.  Most often this elixir is white or light brown with some pepper flakes included.  Every bite of the steak includes ample measure of gravy and minimal distraction from the star of the plate.

If you're ever in Oklahoma City (or Little Rock) eat a CFS at Shorty Small's.  Betcha can't finish it.

It's a GRAVY thing, pure and simple

I love a CFS anytime. Over the years both my wife and I get one with gravy on the side. Unless you wolf it down, the crust will get soggy and start coming off the meat. A forkful dipped in the gravy bowl is my favorite way to eat CFS.
