Title: Deli slicer
Post by: Lemonhead78 on December 23, 2017, 07:00:51 PM
I've been wanting a slicer forever now. I love cold cuts and wouldn't mind making homemade. I bought a 100 dollar slicer a year ago I think cooks brand. I used it once and cleaned it and put it back in the box. If anyone lives in Hudson valley ny area they can have it for free lol. So does anyone know a brand I can buy that will give me the ultra thin slices of ham or roast beef ? I'm not gonna freeze the meat to get thin slices . I realize the real deal deli ones are super expensive. Is their a home use one that is worth buying ? Like not a professional one but not a 100 dollar special either.

I have a 12" Hobart slice that must weigh 100 pounds...Old on, that I found on Craigslist. $75 bucks..... ;) It needed cleaning, and the gage adjustment ( thickness knob) was stuck. Some time...patience, penetrating oil, and a little love from a torch - and VIOLA!

So - search the local trader papers and Craigslist. You may be surprised what you can find. Even better if you don't mind doing a little cleaning and fixing.

It's crazy how all over the place the price ranges are. These are used on eBay. Is a brand new one totally ridiculous for a homeowner . ) Hobart ) is mostly what I see

I bought a knock off LEM on eBay a few years ago. I wanna say it was like $200 or so. I would recommend you look at 12 inch models

If you want paper thin slicing....you are going to need a Hobart - or similar, commercial type slicer.

I have a chefs choice that was under $200. I can get it to slice paper thin. It probably slower than a more expensive one, but it works for me.

Excellent! Please share the model number with us Gus. Always good to know what works well - and is easier on the budget ;) ;D

Chef's choice model 610 - goes for around $120-$130 depending where it is on sale. Mine came with the serrated and non-serrated blades. I think you have to buy the non-serrated separately. That is the blade I use to thin slice meat and cheese.
Again, it is kind of slow, but I have sliced homemade bacon from a full size belly, cheeses, briskets, meat to make jerky, etc. with no problem. Had it about 5 years (maybe more, but the memory is slower these days) with no major problems. Actually no problems. They also make an attachement to sharpen the blades.
For the price range it is a good little slicer.

Look for a 12" commercial grade.  Ebay is a good place to look.  I picked up a used one for a couple hundred bucks a few years back and it was well worth the wait and money.

Like you I started with a 9" home slicer, and it just does not come close to the slicing ability that the 12" commercial grade does.

If you're not in a big hurry, keep on checking craigslist. I got my Hobart 1612 slicer for 150 and like teesquare, it needed a serious cleaning and the gauge plate was stuck from the previous owner using a PAM like spray for lubrication of the guide rods. Cleaning of the indexing dial and gear, plus a judicious use of a propane torch and dead blow hammer got it back into working condition.
