Just a little info that I didn’t put in the video. I used B&B Hickory pellets for this cook.
The ribs were in smoke mode for 2.5 hours and then I kicked up the temperature to
215 to finish them. I calibrated my Maverick this morning and it runs 2 degrees higher
than what the grill shows. Temperatures only fluctuated about 5 to 7 degrees during the
cook. I am using the Don Godke downdraft and my heat shield is all the way to the
right.

Ribs were fantastic! Nice and juicy with a light smoke flavor. Great Tuesday night dinner!

Very timely video, Mike.
I just picked up some "beef riblets" at Walmart and wanted to get some details on how to cook 'em.
These look mighty good.

Boy Mike, Those ribs are looking good. I was all pumped up and then.... You had to show those canned green peas... Oh the horror! the horror, the horror.....
