Think I would like to smoke some wings on my WSM, anyone ever done it? Really wondering about the timing, to small to probe.
-
Will take about 40- 45 minutes at a temp of 250 degrees measured at the cooking surface. You can probe them with a Thermapen.
-
I ramp up my cookers closer to 275-300 for wings and chicken to help crisp up the skin.

I do mine mostly indirectly unless I am making them for 100 people. I did the ones in the video on a Char-Broil gas grill and it worked perfect.
