My older daughter, Emma, texted me from school today - she wanted to know if she could grill some chicken and make tacos for dinner. Lately she's been in the cooking / grilling mood - I sure won't discourage that! So, I responded, you bet - I'll go to the store and get what we need. She also wanted to make her own Pico de Gallo (she came up with her own "recipe" awhile ago - it's pretty darn good!)
She made her Pico de Gallo and we pre-heated the G2G (it's getting dark and starting to snow - so, we are using the "quick" grill.) She rubbed the chicken thighs with Mo' Rockin' Chicken Rub - this is seriously good stuff! Then tossed them on the Grill Grates on the G2G. She took them to about 145* - they will finish in the pan with the taco spices. After pulling the chicken, she chopped it into small pieces and added it to the hot pan (with some olive oil.) After bringing them to the right temp, she deglazed the pan with a little white wine and added about 1/2 C of water and her blend of taco spices. I have my blend, but this one is her own (btw - it contains some Mo' Rockin' Rub...) She cooked this down over medium heat until the spices and liquid formed a nice glaze on the chicken.
The rest of the meal included some roasted corn, Spanish Rice, lettuce, Queso Fresca, olives, Emma's Pico de Gallo, sour cream, and Mo' Rockin' Chicken Noodle Soup. Perfect for the "first" snow of the year.

My oldest Nolan is 7 and he is always hanging around while I'm cooking and wanting me to let him help.. I love it. Those tacos look fantastic.. kudos to your daughter! And let me say this.. HAHA you got snow before me.. neener neener!

Rocky (star of many posts) has been my assistant for several years. She also gets up early on weekends (when she has friends over) and makes breakfast for everyone.
Emma (the older) was more like her mom - if it doesn't come out of a box or cook in the microwave, then it's time to call for delivery. However, lately she has expressed an interest in cooking. Real cooking with real food. Mostly it revolves around grilled chicken right now - but that's fine - I'm not going to argue. She is starting to try her own "stuff", tasting and thinking about what might work. She even asks for advice once in awhile. It's a lot of fun. I am proud of both of them.
Heck, who knows... if this keeps up, mom might even try her hand at cooking... ??? ??? ???
