First tries with CB SRG

Here are three of my first cookings with my new SRG.  The 5#+ chicken and the two potatoes finished up together in 1 hour w/chick at 165.  Chicken was cooked on high with breast down and was held vertical by pinching the tail (pope's nose in some places) between two skewers.  Held it just fine.  Potatoes near perfect.  Three days later I tried a recipe I found at a Big Green Egg site, and thought I could cook potatoes just as they did.  They are peeled, cut in half, placed close together in my Calphalon every day 12" pan (oven-proof pan or bowl, etc.) which fit perfectly on the grill just allowing the lid to close.  Add about one-half inch of chicken stock seasoned with garlic,  sprinkle potatoes with freshly ground pepper and kosher salt, and top each with a pad of butter.  Used an oven thermo and got it up to 350 as required and cooked for nearly an hour.  The stock boils off and then the bottoms of the potatoes get brown and crispy.  The more the better, and I should have cooked them for ten or so minutes more.  That crispy bottom is tastier than potato chips.  Then I put on the flank steak.  Should have had the grill hotter than the 350, as I cooked each side 6 minutes and should have done maybe 8.  Next time I'll try 400.  Finished off the flank and potato dinner with a key lime pie made from the "Carnation 'no bake' pie making kit".  If you can find them in your store give them a try.  Fast, easy, all you add is a little butter, and the rest of the ingredients are in the box.  Several different pie choices, with chocolate cream being my favorite.  And to clean out the tough hardened remnants of the potatoes just soak pan overnight filled with water and a good shot of Cascade d/w detergent and it will wipe clean. This is my first real post, so hope I wasn't too wordy, and didn't break any rules, and hope this works.
