I had to try Bigg ER’s best ever chocolate cake since his looked so good. I had told the wife it was her turn to cook so that meant carry ins for supper from Sandman’ Beer & Wine Depot!

I had all the ingredients except I was out of bourbon and it was too early for beer. I got started about 9:30 AM and got it all mixed and in the oven at 10:00. I was using my Lodge deep chicken fryer. I checked it at 40 minutes and it needed more time another 5 minutes it looked good so I pulled it out and on a trivet to cool some.

After about 15 minutes I loosened the edges with a spatula and inverted it on a plate. It didn’t come out clean about a fourth of it stuck in the skillet. I was able to get it out in one piece and patched the cake. When I inverted it on a tray the top was in one piece and looked OK. I let it cool a while before making the ganache.

I measured out 8 oz. of chocolate chips and heated the heavy cream. Since I didn’t use bourbon I was able to pour the cream over the chocolate chips instead of in the cream! I let it sit 5 minutes and then mixed well. After cooling about 15 minutes it was pretty runny yet so I poured it over the cake a spread it to cover. It went in the fridge to set up. I read later if I had let the ganache sit about 2 hours it would thicken up. Next time I will use bourbon and maybe it will come out of the skillet in one piece!

My wife ordered supper about 5:30 and picked it up about 25 minutes later. She had a broccoli pizza and I had a steak sub and tater tots. The steak sub is with cheese, sauce, onion, tomato, lettuce & pickle. The ground steak is about ¾ inch thick and almost more than I can eat. The sub at $4.95 and tater tots $2 that is a good meal for a good price!

My wife had her cake and Edy’s vanilla bean ice cream right after supper; I had to let mine settle about an hour before I ate cake. My wife said it was great. I thought it was delicious, if not the best I ever ate it is among the best! I thought the texture was in between a cake and a brownie. It may have been a little wet and don’t think it would have hurt to let bake the full 50 minutes and it may have come out of the skillet better.

I see you have baking powder instead of soda.
For the texture, if you used baking powder, it have activated right away due to the heated butter mixture and caused the cake not to rise in the oven. Hence the half brownie half cake.
For this you want to use baking soda only.

LOL!! Don, there's a reason why Bourbon is listed in the ingredients list.

I always have some Bakers Joy, a spray that has flour in it. I never thought of using it in my cast iron. Will try it when I try your cake again and do it right, with Baking Soda and bourbon! Don

I always have some Bakers Joy, a spray that has flour in it. I never thought of using it in my cast iron. Will try it when I try your cake again and do it right, with Baking Soda and bourbon! Don
