Hey T

Here is a jerky recipe i use. You can change it up with other items to. Like red pepper flakes, jalapeno powder and so on.

5 lbs strips
2 T non iodized salt
1 level t cure 1
1 t curry pwdr
1 t cayenne
1 t black pepper
2 T onion pwdr
1 cup soy
1 cup worcy sauce
3 cups cold distilled water.
1 T vinegar (opt)

Cut meat into strips

mix all the ingredients together and let stand for 30 mins, stir once in while to dissolve salt and cure. Add meat

Marinate for 8-12 hours, stir 1-2 time for even coating of meat.

Place strips on racks (dont rinse marinade from meat)

Start smoke at 150 for 2 hours and then into dehydrator at 150-160. Jerky is done when it bends, if it snaps after taken from dehy its to done. Place in brown paper bag for a day or so.

If your going to vac seal, wrap strips in freezer paper, fold paper over at the ends and put in vac bag and evacuate. If your going to ship the jerky and shipping receiver will not get it for a few weeks, my suggestion is to spray the jerky b4 vac with PS. Potassium Sorbate, spray and let dry b4 vac.
