SV Beef Shank Vegetable Curry

I threw a vac-bagged beef shank with curry seasoning in the sv bath for 48 hours. When done, it got dried and a seared  in a CI DO. Plated to cool, and made a curry sauce. Cut up an acorn squash, a russet potato, 6 red potatoes,  and 6 carrots and tossed all in with curry sauce, covered and baked for an hour. When all the flavors were melded and veggies close to being done the cut up meat from the shank was added and baked 10 more minutes to warm everything up nicely. A nice meal for a cold night!  Especially when savored with a bit of B&B and a cup of black Sumatran!

Scally, this was a quick,  simple sauce with a lot of flavor.
In the pan that I seared the shank, I added a bit of oil, a large onion diced fine, and 3 or 4 cloves of minced garlic. Stirring constantly for 30 seconds. Then added 1 1/2 T royal curry powder, 1/2 tsp cumin seed stirring constant. Then I added a can of coconut milk, and the beef juices from sv'ing the shank. Added a bit of cayenne, and dried red pepper to taste. Veggies were added and put all in cast iron dutch oven with lid for an hour. When everything was done added meat to be heated thoroughly.

Scally, I'm sorry but I forgot to mention I added 2 T lemon juice and 1T brown sugar to sauce before adding veggies.
