I hope Chili Master Sav won't mind. I'd like to see if he made any changes in 5 years.

Savannahsmoker’s Mohunken 6 Pack of Beer Chili

   Beer: Six Pack of “Guinness, Dark Ale, or Stout”
   Meat
   3  pounds beef shoulder, cut in large cubes
   1  pound veal or pork sausage with sage
   1  pound Italian sausage
Seasonings
      2 Carroll Shelby’s Chili Kits
   2  tablespoons Oregano
   2  tablespoons Paprika   
   2  tablespoons ground coriander
   2  tablespoons ground cumin
   2  tablespoon brown sugar
   1  tablespoon balsamic vinegar
   4  tablespoon chili power 
   Salt and pepper to taste
Vegetables
   2  Large Vidalia onions, diced
   6  cloves garlic, minced
   1  red bell pepper, diced
   1  green bell peeper, diced
   2  cans crushed tomatoes (28-ounce can)
   3  cans diced tomatoes (28-ounce can)
   1  can tomato sauce (8 ounce can)
   1  4-oz can chipotle peppers in adobo sauce, diced
   1  4-oz can diced green chiles
   1  jalapeno pepper, smoked, seeded and diced
   3  cans dark red kidney beans (15 1/2-ounce)
   2  can mild chili beans (15 1/2-ounce)
Extras: Masa to thicken
   White Sugar for sweetening
   Vinegar for acidity
   Salt and pepper to taste
   For Serving: Shredded white Cheddar, Salsa, Chopped green onions, Sour Cream, Hot sauce and Corn Bread.



         Directions
1.  Drink a beer and read the directions.
2.  In a large skillet brown the beef with ½ package of chili seasoning.
Drain the fat, but don't go overboard cause there's lots of flavor in there.
3.  In a large tall stock pot add the brown beef and two dark beers,
remaining ½ package of the chili seasoning, Oregano, Cumin, Coriander,  Paprika and bring to a boil.  Reduce heat
     Simmer for an hour.  Remember to constantly stir the chili.
   4.  Either, smoke jalapeno pepper over burner or roast in the oven at 400 for 30 minutes.  Place in paper bag and remove skin
5.  Have a beer to reward yourself for all that hard work.
   6.  While beef is simmering brown the rest of the meat in the skillet and after one hour of the beef simmering add the rest of the meat
7.  Use the same skillet and caramelize the onions.
During the last couple of minutes, add the garlic and saute.
   8.  Add onion and garlic to the chili along with chipotles, jalapeno, green  chilies, all the bell peppers, tomatoes, tomato sauce chili power and 1more pack of chili seasoning. (Everything but the beans)
9.  Bring Chili up to a simmer and simmer 1 hour
10.  Good time for another beer after all the hard work
11.  Add Beans
12. Simmer at least 3 hours.
13. You deserved another beer here

That looks fabulous and I do love chili, but I'm only cooking for 2 now and trying to make a smaller amount. I might cut the recipe down some, I have been doing that lately.  Pam  .☆´¯`•.¸¸. ི♥ྀ.
