Hello my bbq and grilling friends....

I apologize for not keeping up with threads and posting some of my cooks. Been busy and one thing leads to another and don't get to post or comment on threads.

But WOW what a way to make up for it.  Those Tex-Mex style dogs sure do look awfully good.

I do not have a question Tony. I do want to encourage you and everyone to remember why LTBBQ exists. We are a community of cooks that are communicative. We share Information that helps build skills for anyone.while we tease about "unicorn" cooks (recipes without pictures) Pictures without recipes or co versation are  lacking the more valuable component. Content......content is why we are here and it is what we all can learn from.
Additionally we do encourage photos but we have a rather nebulous agreement with our hosting service that basically says photos connected to relevant text are fine. No text is categorized as a "photo dump". If we are found abusing our hosting agreement it will be bad for all of us .

Looks like I may not fit in after all. This is twice I have gotten the attention of the moderators....some of you guys know me from the bbq brethren and Tvwbb.com.

I would like more details on the Ceviche.

I got 2 pounds of shrimp. Devained and head off.
Cover in lime juice and let it be happy for about 2 hours.
Chop up 2 tomatoes,2cucumbers,1/4 cup of onion,1/4 bunch of cilantro,3 serranos.

Mix together then add the juice of 2 limes. Add about 1 tbs of black pepper and 1tsp of salt or so. Add salt to your liking.

You can add or take off ingredients. But the important part is having the shrimp covered in lime juice at the begging of the process.
