Ran across this the other day. Not sure if it is anything new for most of you but thought it was interesting enough to pass along.

At least twice a year I have to do a huge bunch of pig candy and, over time, I've learned that the best way to do a big batch is in the oven.  Parchment underneath absorbs the grease and removing done pieces promptly and returning others for "more work" gives best results.

I find the best way for me to cook bacon is in my CI pan.

I like to do mine in CI too, but if cooking in bulk, I use the oven and a rack, 400º 15 - 20 minutes till done like I like it..and SAVE THE GREASE.  .☆´¯`•.¸¸. ི♥ྀ.

Yes!  Bacon in a pellet pit at 300° F is memorable.

The only thing I do differently from the picture - is to line the cookie sheet with foil. Makes for fast cleanup!

Yep.  I agree, it is way too clean.  I lost my igniter back in December the same time you did.  Kat sent me a new one and I cleaned the grill when I installed it.  Then I cooked this bacon, the last cook of the season.  I won't cook with the MAK when it's below freezing.  This week we finally got some seasonal temps but now I'm busy getting ready for a southern trip.  But it will be ready to go when I return, and I will be getting it dirty.

I put the drip pan and grates into the gasser and burn until the smoke stops, and I clean the outside/smoke residue with Bar Keepers Friend and 409.  I'd like to find something better that won't hurt the powder coat but haven't yet.  I have also just started foiling the drip pan.

Yep...that the is same "elbow grease laden" formula I have been using too :D  Have not tried foiling my pan - because it is the one that has the searing holes on the left....But - I may try it after cleaning this time.
