Not long now. I so want to be done with it today. So sleepy. So is it worth wrapping it up for an hour or two in the cooler, you think?

I always let my butts rest for 2 to 3 hrs in my Cambro

I always let my butts rest for 2 to 3 hrs in my Cambro

I agree 100%  I rest both butts and briskets for several hours when competing and usually when cooking for the house as well.

Really I was miserable and looking for an excuse to go to bed. Lol. When I could no longer stand it anymore I took it out. The bone was still attached pretty well but I couldn't wait any longer to get a nap before work for fear of not getting any sleep at all. I wrapped it in a towel and tossed in the cooler. 3 hours later just before work I took it out and the bone pretty much ejected itself. Definitely works to continue the tenderization process. And, at 3 hours in the cooler, still too hot to touch.

Good to hear it worked for you.    Like I said I always rest my butts in my Cambro for 2 to 3 hrs.   I have left mine as long as 11 hours with no issues and still to hot to pull apart

A butt was a stupid thing to throw on on a work day though. I thought I could let it do its thing while I slept and then that weird charcoal screwed me over. My 3pm is your 4am. I got around 2 hours sleep. I'm miserable.
The pork turned out good though. Guys at work devoured half of it.

Not saying it's better than low and slow but it is faster and the bark is incredible   8) 8) 8) 8)

What is an SRG?

Yeah, we tend to use a lot of acronyms around here and sometimes forget not everyone knows what they stand for.  :P


SRG = Charbroil's "Smoker Roaster & Grill"


Their larger version is called the "Big easy,"  and the Big Easy Electric version is often referred to as a "BEESR"  (Big Easy Electric Smoker Roaster).

An SRG is an infrared cooker that is made by CharBroil,  as Cliff pointed out.     

I have been using them for years with great results and even cooked in comps (backyard division) and done real good  ;)

I actually got one for Christmas and after not being real sure about a the quality of it, I took it back and ordered a Pit Barrel Cooker instead. Maybe it was a bad move returning it!
