Still Searching for the Perfect Egg

Working on fried eggs now... Yeah, anyone can make a fried egg... but the perfect fried egg? Found this suggestion on Serious Eats. Cook it VERY low and slow. So I tried it. Pictures are in the pan and then on the English Muffin Toasting Bread ( love this bread) with salt, pepper and dill.

Those are close to perfect for me, maybe a little more done! Perfect to me is yolk half set and half runny and no uncooked whites. But the most flavorful ones are cooked in bacon grease and basted until the yolks start to turn white! Don

Looks really eggcellent...
 Yep, very slow is the way to go...  Doesn't stick or brown to much either.  I had some the other morning with left over french bread. Awesomeness...
 

I'm down to about 8 eggs a day from the girls now.  I will replenish the flock this spring... I like to be in the 30 a day range ideally.  The eggs are really good after I cut the hay field and hens get to run around catching grass hoppers a couple days... The yolks will get noticeably darker orange and richer tasting.

My daughters have caught on to eggs recently - can't keep enough in the house! My oldest only wants whites - so, I have to separate them for her breakfast - but the dog loves it - he loves egg yolks on his food! My youngest makes her own - trying to teach her some new ideas, but she just wants eggs... :)

I recently bought some clarified butter (5 pounds worth) at the Chef's Store.  I find that I use less butter when cooking eggs (this includes scrambled eggs, omelettes and fried eggs).  I like the way everything cooks in clarified butter.  I made some chicken piccata tonight.  I could have eaten the chicken without the sauce.  Give this a try, if you haven't already.

Art, I like clarified butter as well. I make my own and agree I use less. In cooking eggs this way, I used regular unsalted butter - very little and as it finally melted wiped it over the pan with a paper towel. At this temp, not much fat is required - the temp is somewhere between medium low and low. I have never liked brown whites or overcooked eggs. his seems to work very well for me - slow, but excellent.

I like my eggs over easy. I find that medium heat works for me. Once I flip them over I kill the heat and move the pan to a cool part of the stove.

They always come out great and don't overcook that way.

This is the way I do mine. I get crispy brown edges on the whites and nice yolks for dipping.

Americas Test Kitchen Perfect Fried Eggs
Serves 2
 2 teaspoons vegetable oil
 4 large eggs
 Salt and pepper
 2 teaspoons unsalted butter, cut into 4 pieces and chilled

Heat oil in 12- or 14-inch nonstick skillet over low heat for 5 minutes. Meanwhile, crack 2 eggs into small bowl and season with salt and pepper. Repeat with remaining 2 eggs and second small bowl.

Increase heat to medium-high and heat until oil is shimmering. Add butter to skillet and quickly swirl to coat pan. Working quickly, pour 1 bowl of eggs in 1 side of pan and second bowl of eggs in other side. Cover and cook for 1 minute. Remove skillet from burner and let stand, covered, 15 to 45 seconds for runny yolks (white around edge of yolk will be barely opaque), 45 to 60 seconds for soft but set yolks, and about 2 minutes for medium-set yolks. Slide eggs onto plates and serve.

I like Italian bread cut thick and make a hole in the middle and add my egg..works out well for me..notice the date..2013.  .☆´¯`•.¸¸. ི♥ྀ.
