No pictures - Rocky's Homecoming and then State Softball Tournament - drained the battery and forgot to recharge... yikes!

Both daughters and boyfriends here for dinner tonight. They wanted spaghetti. I had some heirlooms in the garden, peeled and crushed them. added some canned sauce, puree, and paste.

Put some sliced onions in my DeBuyer with a little olive oil and salt, let them sweat, then turned up the heat to get some color. Added some sliced garlic (about 5 cloves - I love garlic) and let that get fragrant. Then added some carrot matchsticks and kept them moving so nothing burned. Once they were smelling good, I added about a pound of Italian sausage (bulk) and a half pound of 80/20 hamburger. More salt and some pepper. kept everything moving and added some Italian Seasoning (lots.)

Meanwhile all the tomato stuff went into a pot (except the crushed tomatoes.) More salt pepper and Italian Seasoning. Water is on for the noodles and the oven heating for the garlic bread.

As the sausage and beef came close to done, I added the crushed tomatoes to that pan with some more Italian Seasoning and a little red pepper flakes. Tasted it and it needed something - added some Balsamic Vinegar (wanted a squeeze of lemon but none in the house.)

Added the meat mix to the sauce and let them get to know each other. Noodles are done, bread is done, pulled the sauce - they loved it.

4 teenage kids, including 16 and 17 year old guys... 2 pounds of noodles - gone. A big pot of sauce - scrapping the bottom, a loaf of garlic bread - gone. Not sure what to tell Karen when she gets home (late night at school with site council) she asked me to save her some dinner... ooops....

Should have had the camcorder out to watch the feeding frenzy...  ??? ??? ;D

We did close to the same thing a couple weeks ago but failed to have any paste on hand. It was a bit watery >:(

We had three racks so far this summer...

Sounds like a typical Friday night (minus the meat, that was saved for birthday dinners celebrated on Sunday) when I was growing up! Sounds like a good time with the good doctor.

Key, just let the sauce simmer longer, I only use tomato paste when making pizza sauce.

It sounds perfect..gonna make spaghetti sauce in 2 gallon cast iron pot on a tripod over the open fire this weekend..I get to make my best Damn gahhlick bread too..love spaghetti, should have been Italian instead of Romanian..lol  .☆´¯`•.¸¸. ི♥ྀ.
