My firs Bacon for New year .

Stock ran low .
4 day in a dry cure only salt and sugar . one day in the fridge , 3 of the belly was rubbed with black pepper (pam idea ) 3 hours cold smoke appel . 4 hours hot at 170 til IT 150 .
i gave i one day to firm in the fridge.
