Rainy Sunday Pasta

The rains arrived Saturday evening and just left this morning!  No hope for a Sunday cookout!  :(
Plan B then. The weather this time of year is very unpredictable here. So when a rain day shows up I try to use some smoked/grilled meat from the freezer, that had been stowed away to last thru the Winter.
  So yesterday I decided to make a pasta using pulled pork and whatever else I could toss in!  Found some imported rigatoni, so got a kettle of water going for that. Diced an onion and sauteed it in a T of lard. Added 5 cloves of garlic, minced, and a yellow pepper diced, a bit of salt, and 1/4 tsp pepper flakes. Next I added 12 oz. of PP, stirred into mix. Now took a 28 oz can of whole tomatoes, being carefull, squeezed each into the pan reserving the liquid in can. Now i added a handful of salad olives and a handful of oil-cured black olives (an Italian umami), and stirred well. To the liquid in tomato can I added enough dry red vino ( I'm drinking pinot noir so that's what goes in today errr yesterday) to come up about halfway in can. Add this to the concoction with a bit of oregano and basil. Put lid on and simmer fairly low for a couple hours ( this is Sunday....relax). Then stir, lid off until it reaches the consistency you like. Add to 16 oz cooked drained pasta. Served with a salad with fresh garlic, and more vino!
