Corned Beef Brisket Flats finally On Sale!

My wife loves pastrami almost as much as I do! She found a deal at Kroger's yesterday, flats @ $2.99/lb. She picked up a couple coming out to about 7 lbs. So both are soaking in water and will get smoked tomorrow using Hub's EZ-PASTRAMI recipe. Thanks again Hub! I might even make some sourdough rye bread for sammies on Sunday.

OK the only bad part about this EZ Pastrami recipe is the dreaded...WAIT! :-[
Well the wait is over!  After the soak, coated with the peppery rub, and smoked in the PK for 6 hours using my homemade smoking tube, same length but 3" diameter. Filled with oak-hickory-cherry pellets, it lasted about 5 hours. Today both flats got baked for 6 hours. The smaller of the two got sliced for a mid-day sandwich! The larger of the two will get refrigerated overnight and then sliced and vac sealed for future use.
Today's sandwich is on pumpernickle rye with whole grain mustard, some Carolina slaw, and a Leinie dopplebock!

I love Pastrami, I think I will have to look up this recipe and try this in the near future.
