OK the only bad part about this EZ Pastrami recipe is the dreaded...WAIT!
Well the wait is over! After the soak, coated with the peppery rub, and smoked in the PK for 6 hours using my homemade smoking tube, same length but 3" diameter. Filled with oak-hickory-cherry pellets, it lasted about 5 hours. Today both flats got baked for 6 hours. The smaller of the two got sliced for a mid-day sandwich! The larger of the two will get refrigerated overnight and then sliced and vac sealed for future use.
Today's sandwich is on pumpernickle rye with whole grain mustard, some Carolina slaw, and a Leinie dopplebock!
