This a great meal. I let it go in a simmer for about 3 hours and then pulled at an IT of 210, foil-wrapped the corned beef and added the vegies. I have never done it this way until I saw a couple of post on this and thought I would give it a try. So much better than crockpot. Really tender w/o falling apart and so much flavor. Thanks to all that have posted.
