Surprise Surprise!

Sometime last week, I think it was Friday. My Wife looks at me smiling and says "You've got a surprise coming". I hate when she does that. Surprises manifest themselves in many ways. It could be that I have a month to live, or that I have won the lottery or any variance in between. I kept trying to get clues from her and she offered up none. So.....I began to guess what it was, and at one point I even DID get it right but she never let on. I come home today expecting to see my Harry's order on the front porch (which it was there) but also saw 2 big boxes with the words "La Caja China" written on them. She done went and bought a pig roaster to add to the collection. And I thought I was bad, lol!

Nah, I am sure she will soon. I had looked at these in the past and was curious about it but I never thought about buying one seriously. Usually I am the one sneaking home grills (better than GIRLS I guess) but this time she pulled a sneaky on me :)

I like my pig smoked and this just roasts it so I don't know what to think of it quite yet. This is more for her than me but that's cool, she indulges my many whims on grills so who am I to say anything about this one?

I am going to go on youtube and watch some videos to see what the deal is with them. Have you ever eaten a pig cooked on one Nate?

Cajun Microwave, yes. They're basically the same thing. You could put an amazin' smoke tube inside the box for smoke.

She bought the #1, it'll hold a 70# pig. I thought about the smoke tube but I'll try it first to see how I like it. She's looking forward to the crispy skin! She's going to check around tomorrow for a 50 pound or so swine. We have some farms around that we might be able to buy one from. Time will tell.

  You can always add a smoke pistol or similar and get plenty of smoke.
  There is no airflow in the box but trying a well lit tube couldn't hurt.
If your going with a 50# pig try to get a female if at all possible unless the males were "cut" early.  Once their testosterone kicks in it changes the flavor sometimes. 
 When you flip him have a good hot bed of coals.  You'll get better crisp that way.

Indeed I am, not for that though (it doesn't hurt mind you, lol). I am blessed that she likes to cook outdoors just as much as we men do. That's a rarity. She can cook her tail off. When we first got married she could burn water! Now, she can cook anything. She made us a nice Chicken Marsala with garlic mash for supper! How's that for a Monday night? She's a keeper AND an enabler, lol. I imagine that soon enough she'll be posting a roasted piggy on here. She's off work tomorrow so I imagine she'll check around for one. Tlg4942, I'll have her request a female. That's something I never knew about so I appreciate the tip!

RG - Futzing around on the 'net and found this post from a guy who uses his Amaze-N-Smoker in his Caja China without having to modify it. Might be worth taking a look.

It only makes sense..I have several Amaze-n-smokers. I have the mesh cage one that I got first..they I have a couple of the 6" tubes that fit in anything that I have. IR's, propane and charcoal,  smokers, everything..no reason it shouldn't work here..just sayin   .☆´¯`•.¸¸. ི♥ྀ.
