Today's Mandatory Brunch

I've been working lots of overtime this year. More than a man my age should work IMO, but it is what it is. Far better than to be looking for work! Anyway, after a 12 hr. stint yesterday it was nice to not get up before the chickens! Mrs H got up to feed Bella promptly at 6:00 or else!  ??? and got back in bed. I woke first,  saw the time on the clock and blurted out... $h!£!!!!!!!!  It was 8:20 and we had an appt at the vet at 9:00 for Bella. A 30 minute drive meant no breakfast just coffee. And thank God sgain for cold-brewed coffee. Great coffee in 2 minutes! My stomach was growling, I needed food. So when we got home it was too late for breakfast, but what to have? Another clean out the 'fridge meal. Some of the best! Decided on a stir-fried rice concoction. We had leftover smoked chicken, brown rice, carrots, green beans, and cauliflower.  To that, I added a couple eggs, garlic, and ginger root. And to finish soy sauce with a bit of honey and Sriracha sauce. After a fast cook....bowl time!  It was much welcomed almost worth waiting for!

As I've always maintained, fried rice is a "leftovers" dish. Thank you for proving my point so admirably.

Actually I was thinking of making this with Spam, but thought that I should use up a smoked chic breast.

Do you mean that there are people who think otherwise?

I don't quite understand the concept but apparently there are people who don't have leftover rice or other stuff and make it all from scratch. I guess it works for them but I fail to see the point (especially since cold leftover rice fries up so much better than fresh).

I make fried rice a lot and not always from leftovers. You just cook the rice early and in the fridge. It does fry up better when cold. Yours does look good Gene!!! Don
