Thanks for the kind words guys. Having fun with the new cooker. Did a batch of wings on Sunday afternoon using the cooker as a grill vs smoker.  This M1 is extremely versatile, especially with the adjustable charcoal grate. Family devoured the wings :-)

By the time I got around to starting the ribs (about 4 hours after starting the fire) I was down to little lump left, and just went with splits for the entire cook. It was FUN and YUM :-)
Man the cook ribs and chicken looks scrumptious but what intrigues me and what I am missing is cooking with wood.  What splits did you use???

Royal Oak lump charcoal.

My rib cook, at the beginning of this thread was done entirely with peach and oak splits.  Was very easy. Great airflow and very easy to control. About 2 small splits added every hour.

LOL! My other cooker is a MAK 1 Star. With the exception of convenience, this M1 runs circles around the pellet pooper

Now that kind of talk is really getting me interested.
When you have the ability to burn sticks and/or lump charcoal (heck, even kingsford for that matter) using direct, indirect or reverse flow indirect heat...and the ability to control amount of smoke...and the  ability to raise/lower the fire when grilling... and have the ability to cook as hot as you want...and have no moving parts to possibly fail (although almost unheard of on a MAK)... not to mention the fun factor... there is NO way a pellet cooker is gonna compete...in my opinion, LOL!  With that said, if I have a BUSY schedule and need to do a long smoke, or the weather is super ugly., the MAK is gonna get the call every time.
