Will be with a group of about 30 tomorrow from our church. I volunteered to make the tri-tip for our sandwich bar.  If you haven't had a good tri-tip sandwich, I am soooo sorry :(

I know that many who will be eating tomorrow are used to tri-tip from a gas grill.  I have a pretty good feeling this is gonna knock their socks off...lol!!!

Let's get this bad boy fired up.

Sitting at 225ish° with a nice clean oak fire burning. Notice the intake vent...only opened a crack and still able to maintain a small HOT fire. Great airflow = great smoke :-)



See the thin blue coming from the left of the lid??

Today's cook will consist of 4 tri-tips weighing a total of 10lbs. They will be taken up to 110° with low-smokey-heat...


About an hour later, we are at 110°...off they'll come while I jack the heat for the sear...


I like fire and I like toys...


2-3 mins per side and we're sitting at 135° IT. PERFECT for sandwiches. Will cut up later and let the thinly sliced meat sit in its own juices overnight. Hoping for some good eating tomorrow :-)

I think we are both leaning in the right direction. To be able to do lo and slo and then crank up the fire in the same pit is impressive.

OK now it is 48 degrees in the M1 direction but need more info.  I really want to do roasts fired by wood at 325 -350.
How hot will it get only using the wood chamber?  Reason for roasting if possible.
How much wood is burned at low and slow of say 225 - 250?
I have been researching and have not any reference to the above.

325-350° will be no problem at all. I'd start with a FULL chimneys worth of burning lump, and then start adding your wood.

The amount of wood to keep the pit at 250 is probably about 1 large split or 2 small splits per hour. That's if using wood only. If you use lump combined with wood, you can go hours without touching a thing.
