If you enjoy a good pot roast in a Dutch oven with veggies, you must try this. IMO, this is the very best tasting chuck roast that I have ever had! And to top it off, ditch the knife, you won't need it! Tender is an understatement! I wanted to marinate a 3 lb chuckie Mrs H brought home the other day. So I looked on the net for some guidance. I found it, at MidwestLiving! The only changes I made were that I gave the roast a good going over with my Jacquard tenderizer on both sides of the roast and in two directions, before marinating in the merlot wine for 24 hours. And I used a 7 qt. D.O. so I put extra parsnips and carrots in as we love our veggies here! When you are done roasting you will have the best pot roast and a bonus, the wine sauce is outa this world in flavor! I honestly can't wait to make this again!
