So, lunch was on me, the wife had dinner under control
She took roma tomatoes, garlic, jalapenos, onion and stuck'em on the pitboss pellet pooper on smoke for a couple of hours. She made salsa that I LOVE and put it in the fridge to chill. When the time came, she took some brisket and shredded it in the kitchenaid with the paddle, flopped it in a pot with some ancho chili powder and put that on some chips with rotels, black beans, black olives, pickled jalapenos and lots of shredded cheese. We also had queso (which she used sparingly for some odd reason). My plate had lots of cheese dip (queso) and that glorious salsa on top, along with a couple of dollops of sour cream. Man.....believe me when I tell you, it was GOOOOOD!
