I want to get into dried sausage making . Besides a few recipes on YouTube I see , I can’t really find any on their site . Am I not searching good enough ? Do I suppose to just use traditional recipes but use their bags in the fridge.i wish I can find recipes to use their products easier.
I ordered their steak starter kit for now. It has 3 ribeye bags, and 3 shortloin bags which are larger than the ribeye bags . What is a shortloin ? A roast that produces t-bones and porter houses ? If that is true wouldn’t I need a band saw to cut it ? I see 20 inch hacksaws for cutting meat but I think this would be too sloppy for cutting porterhouse steaks ?
I know that is a lot of questions but any help would be appreciated
