This is one of our favorite dishes on a cold winter's night. One of my wife's specialties... Chile verde con carne.

Of course! Tell you what, if you bag an elk, we can whip up a big pot of green chile elk stew. Good good stuff!

THAT is my favorite! - I make some whenever we can get fresh roasted Hatch chilis. There is a grocery store chain here that ships them over here fresh - and sets up a roaster on their their sidewalk. Not quite the same as being in NM...but close as I can get at that moment. ;D. The Mrs. and I are planning another trip out to NM, AZ and UT in late spring.....I may have her convinced that her future  - with me -  ;) - lies in the West. Getting way to crowded here...And need to return to my roots.
