Tale of Two Meats

It’s 45º out, so I should be smoking cheese, right?  I will get around to trying that one of these days.  But today I’m staying a little closer to my wheelhouse.  I was at Sam’s Friday and picked up a 4 lb. chuck and an 8 lb. butt.

So, I got the 26er loaded up KBB in the SnS and some apple chunks.  The chucky got a rub down with Rod Gray’s The Most Powerful Stuff and the butt was hit with some Smokin’ Guns Hot.

The 26er’s running at about 230º and we’re off to the races.

Here we are about an hour into it:



Just started spritzing.  More later . . .

Alright guys. Enough with the warm weather reports.

We got five inches of snow last night and then the temp dropped to about 5° above zero.
Right now it is 17° above, & I can't even get to my cook deck because of the snow drifts.
So tonight I guess I'll do my wings in the air fryer. >:( >:(

Seriously Dawg, your cook is making me wish I lived next door to you.  :thumbup:

Sorry to hear about your distress, Roget.  If it makes you feel any better, I just checked and it's dropped below 40º.  But, the butt's at 122º and the chucky's sitting at 134º.  I just reloaded the SnS, so we should be good for a couple of more hours.

Thanx for trying to cheer me up, but no, that didn't help.
Now if you would FedEx one of those chunks of meat to me I think that would help get me back in a positive mood. ;)

So, as promised, here are the final products:

Pepper Stout Beef (didn’t have a Guinness, so I had to settle for Newcastle):




Pulled pork BBQ:



It never ceases to amaze me how much loss there is when I cook these products.  My chucky started out at 4 lbs. and I ended up with less than 2 lbs., not including the peppers/onions.  I started with an 8 lb. butt and packed up less than 4 lbs.  Just curious, how does this measure up with what you guys are getting?

I generally get about 50-60% of raw for butts and a little higher for chuck. Might have to do with the fact that you have to deal with the "shiver factor" with an outdoor temp below 70o.

They both look fantabulous!  They're making me hungry for some BBQ!




I think weight loss depends greatly on whether or not you foil before the stall hits.

Because I foil before the stall hits, and tend to mix much of the defatted foil juices back into the meat once pulled, I don't get a whole lot of weight loss; maybe 10% or so.  I also account for about 10% weight loss from bones.
