First cook on the FEC120

This was the first cook on my FEC120.  I found these beef ribs at Resturant Depot.  The smoke flavor was a little strong for my taste.  I used 100% mesquite at 225 degrees for 4 hours.  Next time I think I will mix the pellets 50% hickory and 50% mesquite.

Mesquite will getcha everytime!! I used to mix apple with mesquite in my offset and that was real nice!!

The ribs sure look good!

Pappy,  I was going to cook today but as you know it is very cold out.  Yesterday with the 50 MPH winds and the -22 wind chill the FEC120 stayed within 2 degrees all day of the 225 set point

I hear ya on the mesquite. Try 25% mesquite and 75% hickory, or better yet Apple (like smokeasaurus suggests). You'll be surprised how much the mesquite still comes through.


Like Smoke, I think apple mixes really well with just a little mesquite.  It kind of spices it up a bit.

The ribs sure look good, even if they were a bit smoky.

could you tell me why you picked the fec 120 instead of the fec 100?  i've wanted a fec100 since i found out about pellet bbqing.

I chose the 120 because I like the firepot being seperated from the cooking area.  I temp probed both and found the FEC120 to have a more even heat through out the cooking chamber.  They are both good units though

I was so excitied to eat the wings I forgot to take a picture of them.  I am making a batch for the Superbowl.  I figure I can fit 150 wings or more on there at one time...Now that is awesome
