I wanted to try something based on what Mike Ditka used to make at his restaurant. I was called the Coach's Stack if I recall correctly. His version was a cornbread base, mashed potatoes, meatloaf, onion straws and bbq sauce drizzled over the whole shebang. I always wanted to try it after seeing it on some food show but never made it there to give it go.
So.....I made my own version. The RG Meatloaf Stack
Garlic bread base, Colby Jack Cheese, Yukon Gold Garlic Mashed, Bacon Wrapped Smoked Meatloaf (seared in a hot pan once sliced, then glazed with chipotle beer bbq sauce), Onion Straws, Scallions and a BBQ Drizzle.
