Some 2011 Charcuterie

Ok, Ok... call me a copy cat, but I couldn't resist. ;)

I saw NePas' 2011 sausage slide show and thought, "What a great idea to remember some of the stuff you did over the past year!" I liked it so much I had to put one together myself.

I've enjoyed making fresh bulk sausage for a number of years. A couple years ago I branched out into smoked sausages.  Rick (NePas) is one the folks that's been a great influence & encouragement to me.  The cotton sausage casings my wife makes, for example, where an idea he gave me.

Did you sell your MC?

I looked at the Meadow Creek cookers but never got one.  I'm still looking at the PR 36 or SQ36, which is like the PR36 but with the offset firebox. I know you didn't care for  leg design on it, saying it was a bit wobbly. I prefer the offset design for indirect cooking & cold smoking. Either grill would last me a lifetime.

Love your slide show.  Makes me feel like a real beginner.  I need to do a better job of documenting all my sausage making in 2012.

Nice show Cliff!  Makes me wish I wasn't so busy/lazy, I had a lot of fun this morning going thru last years cooking photos looking for the pet pics.
