My daughter and grand daughter are going to be down from PA in Feb so im making slim jims for them to take back. Will be making SS for my neighbor up there to.

Have to use up some stick mix.





8 lbs of beef slimmys. Have to fridge cuz my wife wants to go to the movies.

Had to break open into a large bag of casings.



Using my longer tube.



Aint going to bother with weighing. Im not that critical anymore on this easy stuff.



Half hanging.



Loaded for some 140* for a few.

Going to give em a 2 hour bloom time. Then in the paper bag for a day in the fridge to mellow.

Those look good! I've made a lot of sausages but never did slim jims... where do you get the casings?

All cut to lengths and ready for vac bags.

I got 10 bags of 10ea, 1 bag with 7 and 9 oz of ends and loops ready to go north with my daughter next week.
