Rubs you use for Brisket and Meat?
« Reply #-1 on: June 24, 2013, 10:15:57 PM »
While reading the thread on Tri Tip that I had posted, the recipes were very simple including salt, pepper, fresh garlic.

What rubs do you folks use for brisket and other meats?

Do any of you use Tatonka Dust? Or Mad Hunky General Purpose Rub. Or, a purchased brand from the market or net? What about "Fine Swine and Bovine" for brisket or Tri Tip?

Do any of you inject your brisket or tri tips or other meats and with what?

I would appreciate your thoughts and experiences.

Ed

I use Tatonka dust, gunpowder, Big Poppa's rubs, Tee's Red Neck Rubs, Instant Gourmet and many others.

When searing Tri-tip I like to use a simple rub.

I rarely inject but just got a spit jack and plan on getting some use out of it ;)

I use my own dry rubs and injections. I don't have time tonight, but I will try to get time to PM you some recipes. It would take way too much post space.

I use a lot of rubs on pork and poultry but on beef I'm pretty much a salt/pepper/garlic guy (In my world, cows taste good the way they are; pigs and birds sometimes need some kick).  Rarely inject brisket but if I do, it's simple and beef bullion-based.

I ain't no brisket expert but from what I read most of the better brisket cooker do as the Turtle in keeping it simple with salt, pepper, and maybe garlic.  Dee

My beef and pork rubs are a smorgasbord of ingredients (typical BBQ stuff with an emphasis on salt/pepper/garlic/onion/sugar).  I normally mix up a big batch that will last me a while, and then I will just eyeball it the next time.  Of course, it is never exactly the same but that's OK by me.  For traditional tri-tip (medium rare), I do prefer S/P/G/O and not my full beef rub.

Ed, if you don't tell anybody I sent this, I'll share it with you...a video from a brisket pro.  You can watch it and see what you think.  B T W, he is using an offset smoker like yours and mine.

Brisket -- Butcher's for beef injection 1/2 strength.  Rub with Montreal Steak (salt, pepper, onion, garlic)
Butt or Shoulder -- Butcher's for pork injection 1/2 strength.  Smokin' Guns Hot rub
Ribs (not in competition) -- Obie Cues Sweet rub.  Light coat of Head Country or Sweet Baby Ray's sauce
Chicken -- T's Chicken Savor rub or Penzey's Southwestern Seasoning.
