BBQ Flavor Slim Jims

5 lbs worth. Mixed on 2/15

Breaking into my MC bbq seasoning.

Adding 6 Tbs to 1 cup distilled water.
1 level tsp cure 1 in the water
1 Tbs corn starch.....yeah  ;D




Get this all mixed up good and let stand for 15 mins to marryup



All meat mixed and going in the fridge covered.  No not so the cure will work, Cure will work regardless if you fridge or not. Just not enough time today.



This morning.

Stuffing with the Weston 7 lb and into 17mm casins.

Ready to start.



Do yourself and the O ring a favor. Crisco the O ring. You wont taste a thing.



Pro of the Weston. It will hold 1 1/4 lb more than my 5lb LEM. I will con the Weston later.



The small Weston tube will work with the 17mm. Its tight but they do go on.


Tied ends. I get PMs asking why do i tie the ends and sometimes make tied lengths? Cuz that's what i like to do. Think outside the book.






Here starting to stuff.






I like to tie the bend that goes over the SS bell.



All stuffed, now into the 6 rack.



6 Rack with PID starting at 130 ramping to 170 until done.



Ok Cons of the Weston

Hate the O ring set up on the piston.
Dont like the handle on the gear spline shaft not being able to secure it
Weston dont make motors for the 7lb...Or they say they dont?
Dont like the large elbow at the bottom of the canister because it leaves meat in there. Dont wanna break out the LEM or shooters for less than 1/4 lb to stuff so i just clean and toss the meat.

I have the same stuffer and I learned the hard way to order and keep a couple of spare O-rings.

Here's the really dumb part: If you want to order them directly from Weston, DO NOT mention it's a 7 lb. model.  That model was made specifically as a Cabelas item and they they won't let Weston sell replacement parts. Instead just tell them the part number and if they ask tell them it's a 5 lb. stuffer which uses the same O-ring.



Dont like the large elbow at the bottom of the canister because it leaves meat in there. Dont wanna break out the LEM or shooters for less than 1/4 lb to stuff so i just clean and toss the meat.

Again, I know what you mean. I can't stand wasting it, so I'll either make patties out of the leftover and smoke them, or sometimes I'll take the stuffing tube/bell off and shove that meat through and into a casing with the handle of a long plastic spoon.


Other than those few issues the stuffer is built like a tank.

Do you guys find that the horizontal hydraulic stuffers waste as much meat? I know Rick has a hydraulic...But you are selling it - right? Reason?

Thats what i will do.

The left over meat in the Weston stuffer is from the large elbow at the bottom. The piston just dont push it out and into the tube. I have heard of folks rigging up some sort of pusher at the piston bottom but i'm not going to do that.

As for my larger stuffer, im going to keep it cuz im doing a demo in April with it.

On my LEM 5 lb stuffer there is no elbow at the bottom so the remaining meat is just whats in the stuffer tube, i just toss it unless its like game meat then i use a dowel to push it out.

Here is what remains in the water stuffer in front of the piston, there is just a tad in the tube also.

Just about all the same length.





Close up $ shot. My daughter bought me a new digital slr (not here yet) so my pics will be better.



All in 1 vac bag cuz where these are going they wont last long. The ends and loops are mine for snacking on.
