I am a big fan of Rendezvous ... a bit herb-y compared to other TN joints but definitely a flavor that stands out and is darn near a Southern institution.  While I hate their TV show, Interstate BBQ is quite consistent and they do treat swine right (thought I thought their beef was only average).  A&R makes a killer pork sammich but I'd get it without the slaw (overpowers the meat, IMO).

Central is very good, and a lot of folks will say it is the best.  I am a bigger fan of Germantown Commissary.  Did I mention that they have AYCE ribs on Mondays?  :o

Some good suggestions here.  Stay away from Corky's -- overcooked, nasty tasting ribs.  Rendezvous is one of the few "famous" places that actually has very good ribs.

Hub is right on.  That place reminds me more of a Hooters because it more show than good eats.
 
Although if they did have there staff in shorts and see through tees it would help thier bottom line for sure 'cause the food won't  :(

I've heard nothing but great things from friends of mine about the BBQ at Memphis BBQ Co. It's just outside of Memphis in Horn Lake, MS. I plan on checking it out when I get a chance to make it to Memphis in May some day. :)
