Well I have been wanting to grind my own burger and makes sausage so I went to the store and picked up this Kitchen Aid meat grinder attachment.  It's not made to do a big batch but it lets me get started.

 I figure if I can make some good sausage with this I can talk Santa into a larger unit ;)

I have a big stuffer that my father used in his restaurant.

 Tenpoint5 and Rick told me about trying to use it as a stuffer.

Originally I went the cheap route and used a food processor as a meat grinder, and it could do the job, but the consistency was not even.  Then we purchased this grinding attachment for the Kitchen Aid and found it sufficient for the small batches we do (there are only two of us and we do about 5 pounds of meat at a time.

One thing that works out well is adding fresh herbs - we've a sage plant in the garden and before grinding pork I'll pick about 30 or so leaves and toss them in while the pork is grinding - really blends well with the meat and makes the kitchen smell great  ;D

I've been toying with getting the KitchenAid grinder ... is it sturdy or would the Chef's Choice all-metal unit be a better choice?  The metal one is a premium price, obviously but ... it looks fast:



Any suggestions?

The Kitchen Aid unit is plastic but appears sturdy enough for my purposes, but then, I don't do large nor frequent amounts.  For the casual user I'd think the most cost effective would be the way to go.

I had the plastic one that lasted for a few years, until I started making more and more sausage.  I eventually split the plastic case and had to upgrade to a regular grinder.  The new one works much faster.

Oh, yes.  Don't put the grinding attachment into the freezer before grinding meat.  The "Master" (that would be Nepas) says bad things can happen to the plastic case if you do.  Don't ask me how I know.  Suffice it to say I have a new grinder.
