Dinner - nothing special, but tasty

A composite dinner this evening - long day at work means that an easy no-brainer dinner is just the ticket.
  • Chicken breast roasted last weekend on the SRG
  • Smoked Gouda done in a Bradley about 4-6 weeks ago
  • Crusty Dutch oven thyme bread baked a few days ago
  • Baked potato roasted on the SRG with the chicken
First cut a thick slice of the crusty thyme bread, then top with thick slices of smoked Gouda.  Pile high with thinly sliced chicken - remarkably the chicken is still juicy and tender after a couple of days in the fridge top with rosemary salt and black pepper. Into the microwave for a minute to melt the cheese and heat everything through.

Simply sliced the potato, cut longitudinally and across the length so melted butter would flow into all nooks and crannys.  Top with kosher salt and pepper

The combination of balanced simple ingredients - that each have 1 "something special" about them ( the use of thyme in the bread, the smoked cheese, etc) is a special dinner indeed.

Very, very nice sounding. I will take a nice chilled glass of a semi dry Alsation wine with my plate please.... ;)

Thanks for the comment! That would be an excellent choice!  We had a chilled traditional-style Kestrel viognier with hints pf pineapple and star fruit up front, and a balanced, rich finish.

That does sound good. I agree, a simple meal with well made components, thoughtfully brought together to create a whole... that is hard to beat. A Pinot Gris from the Columbia Valley for me please. Very nice dinner, pz!

Thanks David!  King Estate is an excellent Pino Gris - out of oregon, in an area well known for doing that varietal well. I'd definitely try that with a sandwich like this.  :)
