Taco Wednesday?

I was finally released from the hospital today. To celebrate, my family decided I should make tacos! They wanted chicken and ground beef, hard and soft, with rice and beans. I marinated the chicken (thighs) in some grape seed oil with a blend of my favorite dried chilies and spices for a couple hours then cooked them on grill grates over the G2G. The ground chuck was browned on the stove and more secret spices added with some water to make the "sauce." Served with shredded lettuce, Mexican cheeses, sour cream, and some of that salsa from the guy with the sunglasses... Spanish rice and black beans on the side. Not fancy, but not too bad for just getting out today. Rocky liked it!

Welcome home David!  Back in the saddle again......Very nice tacos!  I could inhale a few of those buggers all loaded up. Maybe a FT or two. Glad you're among the living buddy!

My wife has a couple of plaques in the kitchen "I only have a kitchen because it came with the house..." and "My next kitchen will just have vending machines..."

I think they got tired of the microwave and McDonalds.   ;) ;D ;D

Looks fantastic David!   Even the simplest dishes come out spectacular when the food is properly spiced  :)

Thanks everyone - it's really good to be up and around. And cooking even a simple taco dinner sure beats eating the hospital food!

David, I am glad you're out of the hospital, up & about! Hope it wasn't anything serious.

The hospital food may have been better than average, but I bet the tacos were still better. I know one thing; they sure look dang good!
