Cold smoking cheese - first time in winter

Just finished smoking cheese - took 2 full hours (pecan).  My sweetie wanted me to make it for her family members

Thanks guys - I must have bad taste buds because I like it even straight out of the smoker.  However, it does taste quite a bit better 4-6 weeks out.  :P

I can wait until the next day, and that is about it.  The key to waiting properly is to always be cooking replenishment stock and still have an eating supply.

Great batch of cheese there pz!!  I presume you smoked that batch in the Bradley.  It does a great job ... but don't cut the cheese just yet  :D  :D  8)

Thanks, SP - yep, in the Bradley - the temperature was just about perfect - around 75F, and the cheese took up the smoke marvelously.  Had to have a bite though, and kept a single Gouda wedge for myself  ;D

Out of all the things I cook or smoke Kimmie does not like smoked cheese and can't figure out why?  I guess cause it ain't BURNT!  ??? ??? ???
