Long cook today. 2x2 bricks around the perimeter, mesquite on top, pan with some beer in the middle


Shoulder in place, fat cap up (someday, I'm gonna do one FC down)

5 hours into the cook. Just burning coals now as smoke penetration happened during the first few hours
 



Using my original igrill to monitor both ambient  temp and internal meat.
I'm very pleased with the temps and fuel consumption rate and estimate 2/3 used.

Now, I think we all know this is stall territory. Well, that is OK by me as this is a dish for tomorrow. Therefore, I won't be using the Texas crutch on this cook, but will just be adding coals to keep things going till target temp of 203 is reached.

Well, had to pull from grill at 196. Placed in cooler and let rest for 3 hours, till IT temp was about 150. As I was stuck at party, placed foil wrapped shoulder in oven set to 165 till I could get home.

Just pulled it and I am very pleased with the results.
