Here's an interesting article about Sriracha HOT Chili Sauce.  Check out the video in the article.

That stuff is good if used sparingly!  :P It is too hot for me though! I like a little heat but want some flavor too. Many people love Tobasco but to me it is just hot with no taste. My favorite hot sauce is Cholula, it has flavor too. Don

There have got to be hundreds of different styles of "hot sauce" and different dishes benefit (or suffer) differently from their use. Most, of course, are geared to the local peppers, tastes and food of where they were developed.

Tabasco is a Louisiana-style sauce while Cholula is Mexican - a different taste entirely. I prefer Crystal to Tabasco when I want that style but I agree that Cholula is one of the better commercially available products of its type. Sriracha also has a place in the rotation but you've got to use it moderately to get the benefit of the taste as well as the heat.

My suggestion - grow or buy some peppers and make your own. I mix various peppers (usually habanero, guajillo, New Mexico and pasilla) in a killer Mexican sauce - great flavor and I can control the heat level. We bought a bunch of 5-ounce bottles and give them to friends whenever I make a batch. The bottles always seem to find their way home with requests for refills.
Everyone is entitled to my opinion

I can't get past the color of Sriracha for some reason.

to be honest I don't think it's that hot but I do like to lite flavor. Red hot is my go to hot sauce and leave Tobasco on the table for eggs and my V8
Love to cook and eat

I also don't think it is that hot, but I still use it sparingly. Works great on wings!

I like it, in ample amounts, on just about anything.  The heat is moderate unless you really overdo it and it has a clean flavor that combines well.  Great stuff  ;D

I like it!  It has a nice flavor regardless of the heart. Kerry made chicken pot  for us and the kids last night. Several of us used The Rooster sauce on it.

It has a fair amount of heat but I would not rate it on the "masochist" scale. It has a great flavor that I enjoy.

There are many sauces that I have tried that are just painfully hot :o

No flavor just heat. Those sauces are just to prove how manly you are and not really practical for everyday consumption.

I consider myself a heat seeker and keep a bunch of different hot sauces and peppers on hand to enjoy.
