Corned Beef and Cabbage ... Not just for St Patrick's Day

SWMBO and I enjoy a boiled Corned Beef and Cabbage dinner every couple of months.  There's so much you can do with the leftovers  :)  Ever since St Patrick's Day Costco has had some nice 4+ lb Shenson (USAD Choice) Premium Corned Beef Flat Cut Briskets.  Simmered it for about 4 hours.  Rested under foil tent while boiling the Cabbage, Carrots, and Celery in the water used for the Corned Beef.  In staying with my Paleo lifestyle I chose to steam some Sweet Potatoes vs regular spuds ...



Sliced just a portion of the Corned Beef ... here's the rest for leftovers  :)



The Money $Shot!!!  ...  I figure a few extra veggies won't hurt me   ;)

That's just an awesome looking plate and I agree with you; New England boiled dinners are wonderful.  And to top it off, you are left with the makings for some super hash.  You've got me thinking; I'm overdue.  Nice cook.
