Interesting idea, but that is still a lot of money.

Agree!!!  You can buy a whole lot of <a href="http://www.drybagsteak.com/shop-all-umai-dry.php">UMAi</a> bags for that price and you don't need to find an extra 34 inches of unused space to put them in.

I would love to have one. Very cool! If they made a stand alone unit I might consider it.

However I just ordered the new Uuni 2 and my CFO would not approve anyways.

Could you use a one of the little refrigerated wine cellars and wrap the meat in cheese cloth and accomplish the same thing.  It seems to me to be a mini fridge that hold at 34 to 38 degrees.

It controls the temp and humidity. Being able to control the humidity automatically is the main selling point.

The humidity plays a critical role in proper dry aging.

I have and used the dry age bags and they work well but this is high on the cool factor.

This would work very well for the person who wants to do small amounts. At 550 bucks its very reasonably priced. I know just how much you can spend on this stuff and you have to fiddle with it to make it work properly. I have made some very good dry aged products in my setup but if I had seen this years ago I would have jumped all over it. Like Mike said this is just way cool, if I bought one I would have to go back to work and I sure don't want to do that.  :D

I meant that with emphasis on "looks";  In other words the way it's encased, it looks like it could be setup as a stand-alone unit and still look decent. Hopefully that makes more sense.

It is a fair amount of money. But, if a family was buying dry aged steaks on a regular basis, I think it would eventually pay for itself. It DOES have the cool factor, and let's a person choose the meat to age vs. what's available at the butcher... Lot's of ifs... but it is pretty cool.
