Pretty impressed all in all with the hanging method of smoking a packer brisket! About 9 pounds trimmed.

At 201º pulled and cooler rested for an hour.

Looks great! What was the total cook time? Have a 15 pounder I'm gonna do this weekend. Costco prime packer!

Cook time was 12 hours. Looks forward to hopefully seeing your results!

I am planning my first PBC brisket this weekend and had a question on timing. Reading forums I see times ranging from 6-14 hours. The PBC video states 4-6 hours. Any idea on why we so much variation in times?

I am trying to figure out if I can start early the day of the event or if I need to cook the day before..

We watched that same PBC video and thought no way 4-6 hrs would cut it.  If you have the remote thermometers that you can set alarms to I would start late the night before if it was me.  You can easily rest it finished with towels in a cooler for 4 to 6 hrs.  If you are doing a full packer brisket I think it will take all of 10 hrs, ours took 12 with an hour of resting time.

Thanks! I am going to hope for the best and start it Sunday at 5AM to be ready and rested by 5PM.. Making the call based on the fact that I tend to be asleep by 10PM and would not make it up late enough to start it middle of the night.

I will post my cook on Sunday.

How are y'all getting 10+ hour burn times?  Are you adding more charcoal part way through?  My PBC starts burning out around 8 hours.  Then again, I've been using lump charcoal not briquettes - maybe that’s the difference.
