First attempt with using the reverse sear method. Slow cooking until the IT reaches 125 then rest until IT gets to 135 and then searing for 1 min on each side.
Here goes nothing!

Med rare from edge to edge instead of the bullseye effect typically achieved with the regular sear method. Also, the crust was way better doing it this way.
I can't believe I waited this long to try the reverse sear method.

Nice job!! The flame broiler in the Pit Boss makes reverse sear easy. Try doing it to a tri tip...............just too good that way.........

Poke the potato with a fork then
lightly coat the potato in olive oil. Then I put Kosher salt on it and bake at 350 for about an hour or so. No tin foil though.
Tin foil makes the skin soft.

Looks great! I felt the same way after reverse searing a steak for the first time. I also reverse searing hamburgers and like someone said tri tips, delicious. Great job and here's to many more reverse Sears.
