Haven't contributed lately; just haven't been cooking anything different lately, just the usual. Our local store had USDA Prime beef short ribs that were boneless, so I grabbed a couple packs. Something different. Basically cooking them like brisket. Put them on SMOKE for four hours, then 250F for a couple hours to 165F internal. Put them in aluminum foil steam pans with beef stock for a couple hours at 250F. Will update when they're ready! Really like the new upgraded Pellet Boss, and the K type thermocouples. Working even better than new!

The ribs turned out great! Took them out of the steam pan at 205F, glazed and back it to set the sauce. Moist, tender, and great flavor! Will definitely get them again. Really like this cut.
