Bought 2 racks of baby backs one weighed in at 2.92 lb and other at 2.94 lb. I found that baby backs weighing in between 2.5 lb and 3 lb cook the best.
Of course I removed the skin in the back then rubbed down with maple syrup and applied plowboys yardbird rub (buddy bought it for me and is first time using). Used to chunks of cherry wood.
Put in to the PBC and held temp around 300 degrees (had to crack lid couple times to hold temp) and at 3 hours 20 mins I was gonna pull them and wrap and put in oven to get fall off the bone but to my surprise the ribs were between 198 - 206 degrees. They were tender and cooked to my liking and the yardbird rub well I think it's my new favorite rub and full of flavor.
