It looks great!   I like using cloth sausage casings too. One of our members (nepas) turned me on to them some years ago.

What kind of bologna is it?



P.S. I moved this into the Charcuterie section (under "Cured meats & Food Preservation), where it might get better attention.

I thought it looked like it might be Lebanon Bologna.   Living close to Amish country, we get Lebanon bologna around here, both the regular (my favorite kind) and sweet.  I love the stuff!
