My wife, Andrea, wanted to do a rib cook together. She did the rub, bbq sauce, and the mop, I did the easy part, smoking them.
Sauce and rub done the day before. Rub applied day before and allowed to get ready overnight stay
Ribs setup for low and slow cook using the SnS, was able to keep temp between 225-250
After first hour I mopped ribs and then mopped ever 30 minutes. I would go every hour instead of 30 minutes. Also applied some more rub after each mop.
Pulled after about 5 hours
