First Brisket from Crowd Cow

Bought a 5 lb brisket point from Crowd Cow. I never did a brisket this small, nor just a point so I thougt I would try it.
You can't tell by the photo but the first thing I noticed was that there wasn't much marbling.



Injected and later applied a basic rub



In the smoker at midnight.Went to bed and around 9:00am it was at 160* and ready to wrap.



Wrapped



Was at 201* at about 3:00pm. FTC'd until time to eat at 5:30. Sliced. The taste was very good, but the brisket was dry, especially for a point. I guess I was right to be concerned about the lack of marbling



Plated with some beans and corn on the cob.



So overall I would rate it a disaster except that I have a lot of meat for tacos.

This was my first long cook on the MB 560 gravity fed. It worked well. In the morning it still had half a hopper of charcoal. I did buy the Fireboard Drive controller to replace the Masterbuilt unit, but I did it more because I wanted it for use on other smokers more than out of necessity.
Also,here is how I store my pellets, charcoal, and wood.



They are empty cat litter containers that Igot from friends who have cats. The work good. They hold about 20 lbs of pellets and about a 17 lb bag of charcoal depending upon the type of charcoal.
Why couldn't Noah have swatted the 2 mosquitoes?.

Taco meat is good. Might also make good chili.

Looks like they cut the point end off a packer, including underlying flat. Easy cut to make but I didn't see a grade indication on their website.

Yes no grade indication just that it was grass fed. So it could have easily been "select" grade.
Why couldn't Noah have swatted the 2 mosquitoes?.

A grass fed cow will tend to have a leaner meat that a feed lot or grain fed cow.

Gus I just bought from them for the first time. Package showed up a day late & partially thawed.  I called & they were rude. Well next time we will put more ice in there for you.   Next time?????
